You will need the following ingredients:

  • Beef stew meat: You could also chuck roast or top sirloin cut into chunks.
  • Beef broth
  • Garlic cloves or garlic powder
  • Dry onion soup mix
  • Dry brown gravy mix
  • Worcestershire sauce
  • Dried thyme
  • Onion powder
  • Bay leaf
  • Baby Bella mushrooms
  • Salt and pepper
  • Cornstarch and cold water for thickening gravy
  • Mashed potatoes, rice, or egg noodles for serving

How to Make Slow Cooker Beef Tips and Gravy

Prepare the slow cooker:

Line slow cooker with a liner, optional.

If you have time, sear the meat in a large skillet with some olive oil first to lock in extra flavor. Honestly, I usually skip this step when I’m in a hurry, and it still turns out delicious!

Cube the meat into small pieces about 1 inch in size. Add beef cubes, minced garlic, dry onion soup mix, brown gravy mix, thyme, bay leaves, onion powder, mushrooms, Worcestershire sauce, water, beef broth, and salt and pepper to the crockpot.

Add in mushrooms, and stir ingredients together. Put the lid on the slow cooker, and cook on low for 8 hours or high for four hours until the meat is cooked through and tender.

Tip: If you prefer less cooked mushrooms, stir them into the slow cooker about an hour before it’s finished cooking.

Thicken Gravy

Remove the bay leaves. Make your cornstarch slurry

In a small bowl, whisk cornstarch and cold water together until smooth and there are no clumps. Add slurry into crockpot and stir until it’s well incorporated. Put the lid back on and let it sit for 15 minutes or until the gravy has thickened. 

Serve over mashed potatoes, rice, or egg noodles. We love this dish served with roasted green beans. Any roasted green veggie or a fresh green salad would be a perfect side to this dish.

  • 3 pounds beef stew meat
  • 1 (14.5 ounce) can of beef broth
  • 3 cloves of garlic, minced
  • 1 package dry onion soup mix

  • 2 tablespoons Worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon ground thyme

  • 1/4 cup cold water
