You will need the following ingredients:

  • Andouille sausage
  • Spaghetti, or your favorite type of pasta
  • Butter
  • Red bell pepper
  • Yellow bell pepper
  • Shallot
  • Minced garlic
  • All-purpose flour
  • Chicken broth
  • Heavy cream
  • Creole seasoning or one of your favorite Cajun seasoning blends
  • Grated parmesan cheese
  • Fresh parsley for garnish

How to Make Cajun Sausage Spaghetti

Cook pasta al dente in a large pot according to package directions, drain, and set aside. 

Melt 1 tablespoon of butter in a large skillet on medium-high heat. Once melted, add sliced Sausage and saute for approximately 3 minutes or until sausage starts to brown on both sides. Remove sausage from pan and set aside. I like to put a paper towel on a plate and put the sausage on the paper towel to soak up some of the butter.

Add the remaining tablespoon of butter to the bottom of the pan and melt. Add the diced bell peppers, shallot, and creole seasoning. Sautee until vegetables are just barely tender. Add minced garlic, and saute for 1 minute until fragrant.

Sprinkle flour over vegetables, and stir in flour to coat. While whisking continuously, gradually add chicken broth. Add in heavy cream and stir until combined.

Bring to a boil, whisking continuously to prevent burning. Then, turn down to medium heat and let simmer for about 5 minutes or until sauce starts to thicken.

Stir in shredded parmesan cheese until melted and fully incorporated.

Stir in the cooked sausage. Add cooked pasta to the sauce and mix until it’s evenly coated and well incorporated with the sausage and vegetables.
